We recently took a trip to the farmers market near our house. We found quite a few delicious veggies and starches that I can’t wait to cook with! Part of our find we’re fresh peppers and tomatoes. I used them to create a delicious, veggie frittata.
Ingredients:
- 4 eggs
- Half green pepper
- Half red pepper
- 2 jalapeño peppers
- 1 poblano pepper
- 1/2 chopped onion
- 1 tomato
- 1tsp Adobo
- 1 tsp chopped garlic
Directions:
- Heat up some olive oil in a frying pan
- Chop up all of your veggies and throw them in
- Add your Adobo and mix
- Now whip your eggs separately in a bowl
- Add the eggs when the veggies have cooked a little
- Turn the heat on low and cover the pan
- Flip once and you’re done! 🙂
