Vegetable Frittata

We recently took a trip to the farmers market near our house. We found quite a few delicious veggies and starches that I can’t wait to cook with! Part of our find we’re fresh peppers and tomatoes. I used them to create a delicious, veggie frittata.

Ingredients:

  • 4 eggs
  • Half green pepper
  • Half red pepper
  • 2 jalapeño peppers
  • 1 poblano pepper
  • 1/2 chopped onion
  • 1 tomato
  • 1tsp Adobo
  • 1 tsp chopped garlic

Directions:

  1. Heat up some olive oil in a frying pan
  2. Chop up all of your veggies and throw them in
  3. Add your Adobo and mix
  4. Now whip your eggs separately in a bowl
  5. Add the eggs when the veggies have cooked a little
  6. Turn the heat on low and cover the pan
  7. Flip once and you’re done! 🙂

Easy, yet so delicious!
