Cinnamon Apple Muffins with Crumb Topping

I have so many apples from our orchard trip that I decided to bake a few yummy apple treats! 🍎

This muffin recipe has been a hit! My boss loved it so much she said “it has the perfect ratio of everything! It was delicious!” ☺️

Cinnamon Apple Muffins w/ Crumb Topping

INGREDIENTS:

Muffins:

– 2 cups peeled and chopped apples

– 3/4 cup brown sugar

– 2 1/2 cups all-purpose flour

– 2 1/2 tsp baking powder

– 2 eggs

– 2 tbsp cinnamon

– 1 tsp salt

– 4 tbsp softened butter

– 1/4 cup coconut oil

– 1 cup milk

– 2 tsp vanilla extract

Topping:

– 4 tbsp brown sugar

– 2 tbsp granulated sugar

– 2 tbsp cinnamon

– 5 tbsp softened butter

– 3/4 cup flour

Icing:

– 1 cup powdered sugar

– 2 tbsp milk

DIRECTIONS:

1. Preheat your oven to 425 degrees. Spray or line your 12-cup muffin tin. Set aside.

2. In a large bowl whisk together all of your dry ingredients (flour, baking powder, sugar, salt, and cinnamon.) set aside.

3. In a medium bowl mix together your wet ingredients (coconut oil, milk, eggs, vanilla extract and softened butter.)

4. Add your wet mixture to your dry mixture and slowly combine.

5. Gently fold your chopped apples into the batter.

6. Make your crumb topping. Combine all of your ingredients (brown sugar, granulated sugar, flour, cinnamon, and softened butter) into a bowl and use a fork to mix. Stop mixing once they start to clump together.

7. Using an ice cream scoop, fill your muffin cups to the top with batter.

8. Cover the top of the muffins with your crumb topping and bake for 15-20mins.

9. Remove your muffins from the oven when your toothpicks come out clean.

10. Let the muffins cool completely and drizzle with icing (optional)
